The fruit for this 2024 Sauvignon comes from the lower section of the vineyards, where the soils contain a higher percentage of clay. Only carefully selected grapes are harvested, then destemmed and gently pressed over several hours to preserve purity and freshness. Fermentation takes place in large oak barrels, followed by around 20 months of maturation before the wine is bottled
