Vin de Lies (“lees wine”) is one of the most unusual wines Jean-Yves makes, and only every couple of vintages. After his white wines are racked off, the lees (the spent yeast left at the bottom of the tanks and barrels) from all of them are gathered into a single vat, a little wine is added, and the mix is allowed to settle before the wine is drawn off again, once or twice.
The result brings together every white grape and every vineyard he works with, from Savoie and Piedmont, including Jacquère, Altesse and Roussanne. Time on the lees softens the wine and rounds out the texture. Native yeasts and no added sulphites, as always. It sits at 12% alcohol.
This is a great value Peron! Salty, fruity and aromatic on the nose with a herbal kick. Rounded and fresh BUT this wine must be drink in a quick sitting with friends, it will not hold for longer than 2 hours without becoming faulty.
