Œillets 2022 is a natural wine crafted by , in the Savoie region in . This wine is made with grapes.
Les Œillets is the more serious big brother of Petite Robe. It’s also 100% Jacquère from Jean-Yves’ Savoie vineyards, but it usually spends around two weeks macerating on the skins, followed by a month of regular pigeage (punching down the skins by hand) to pull out more flavour and structure.
As always with Jean-Yves, that means native yeasts and no added sulphites. It sits at 11% alcohol.
Drink in one sitting, as with all these Peron wines.
This wine features a tannic touch which works and evolves, but would also be great for aging. Herbal and sensual, with buttercups, white pepper, umami, miso and bruised apple. Would be a good one to age this!
