Description
Yellowstone Rum Cask is a four-year-old Kentucky straight bourbon with a sweet island detour. Limestone Branch Distillery starts with the classic Yellowstone mash bill and ages it in American oak. Then the bourbon rests for nine weeks in casks that once held rum. That rum was made from molasses of sugarcane grown in Cuba.
It is the second bottle in the Yellowstone Special Finishes Collection, after the Toasted Staves release. Master Distiller Stephen Beam says rum casks give the sweetest notes of any finish they have tried. A blue top wrap helps you spot it on the shelf.
Pour a glass and spice meets a soft tropical sweetness on the nose. You may also catch gingerbread and poached pear. The body is medium, with toasted marshmallow, crème brûlée and toffee over toasted oak. The finish turns to tobacco, clove and cocoa, then honey that lingers a long time.
At 100 proof it has enough backbone for mixing. Sip it neat or on the rocks, or try it in an Old Fashioned or a Bourbon Sour. You can also browse our for more ideas.
Grilled meats and dark chocolate both suit it well. It is a great choice when you want a bourbon that tastes classic but a little playful.
