Description
Woodinville Whiskey Co. makes this bourbon from grain to glass in Washington State. The corn, rye and malted barley are grown locally on the Omlin family farm in Quincy. The mash bill is 72% corn, 22% rye and 6% malted barley. The spirit is pot distilled and barreled at the distillery, then aged in Central Washington.
The barrels get special care too. Their wood seasons outdoors for 18 months in wind, rain and snow before it is coopered. Once the bourbon is fully mature, toasted applewood staves go into the barrel. This finish first appeared as a 2017 Harvest Release and now has a national release. It is proofed with Cascade Mountain water.
The applewood shows right away. Crème brûlée and spice lead the nose, with apple and berry on top. The palate is rich with caramel, dark chocolate and vanilla bean. Apple and berry come back here and add depth. The finish is sweet and it lingers.
Sip it neat or with one big cube. It shines in an Old Fashioned, where the fruit stands out. Serve it with apple pie, smoked pork or candied pecans. Aged cheddar and dark chocolate are lovely partners as well.
If you like bourbon with a regional story, this one is easy to love. It brings a taste of Pacific Northwest orchards to a classic American style.
