Description

WhistlePig 15 Year is a 100% with real age behind it. It spent 15 years in barrels before it was bottled, non-chill filtered, at 92 proof. What sets it apart is the final step. It was the first WhistlePig release to finish in barrels made from oak grown on the company’s own farm in Shoreham, Vermont. The brand calls it Estate Oak Rye, and it is one of the oldest bottles in the lineup.

The aging uses three kinds of barrels. There is #3 charred new American oak, plus used bourbon barrels. Then comes custom #4 charred Vermont white oak, where the rye rests for about six months at the end. Those barrels get a long toast and a heavy char. Vermont oak grows slowly in the cold, so its grain is tight. WhistlePig says the extra growth rings add flavor you would not get from standard whiskey oak.

Start with the nose and take your time. It is deep and rich, led by caramel, vanilla and oak. Behind those you will catch allspice and a little burnt orange. Give the glass a gentle swirl and the spice steps forward a bit more.

The first sip is warm, rich and slightly creamy. Butterscotch, honeycomb and baking spice fill the middle of your palate, with a few dark fruits. Then come leather and a hint of tobacco, the kind of notes that only long aging brings. The rye spice never gets lost under the oak. The finish is very long, warm and inviting. It fades slowly and leaves sweet spice behind.

Critics have taken notice. Wine Enthusiast scored it 97 points. It also made the magazine’s Top 100 Spirits list for 2016. Those are strong marks for any rye, and they help explain why this bottle is so sought after.

Enjoy it neat. A few drops of water will calm the spice if you like. WhistlePig’s own favorite way to enjoy it is by a fire on a crisp evening, with a toasted marshmallow on the side. It pairs well with smoked brisket, aged cheddar, roasted pecans or dark chocolate. If you want to mix, try it in a Smoked Maple Old Fashioned. Fans of aged will find a lot to enjoy here. It also makes a fine gift for anyone who collects .
