Volans Tequila Anejo comes from Destileria El Pandillo in the Highlands of Jalisco. The distillery holds NOM 1579, and the tequila is made by master distiller Felipe Camarena. It uses only mature blue Weber agave grown at altitude. Nothing is added, so what you taste comes from agave, water and wood.

The agave is cooked in brick ovens and crushed with a stone tahona. It ferments in open-air tanks, then is distilled twice in copper pot stills. The spirit then rests for one year and twelve days in first-fill oak. About 70% of the barrels are American, 20% German and 10% French.

The barrels are blended and the tequila is bottled at 42%, a little higher than most. This is a small release of about 2,700 bottles.

On the nose you find cooked agave, caramel and vanilla, with light oak spice. Hints of citrus and dried fruit come next. The palate feels silky, with roasted agave, honey, caramelized sugar and baking spice. Toasted oak and a touch of butterscotch fill in the middle. The finish is long and smooth, with sweet agave, gentle spice and vanilla.

Serve it neat in a tasting glass at room temperature. Grilled meats, aged manchego or a caramel dessert all work well beside it. You will love it if you enjoy anejo that still tastes clearly of agave.
