What I most like about the 2021 Pour Vous is its distinctive vintage character. It is a powerful, driven style, not full of generosity. It has menthol and green flavor characteristics with a just-starting to develop toasty character. With its almost fierce nature and what seems like some phenolics, this is one to consider aging. The 2021 would pair well with fully flavored ingredients.
