Description
Union El Viejo takes its name from the Spanish for “the old man,” a nod to the elder in Oaxaca whose counsel pushed the founders toward unity and collaboration in mezcal. The spirit is un-aged and made by hand from Espadin and Wild Tobala agaves that spent 8 to 14 years maturing in the field, which gives the liquid its depth of flavor.
The aroma leans sweet and floral, with smoke, mint, pine, butter, stone and fresh-cut wood. Sipping brings oak and cooked agave forward, with floral notes alongside a dry, citrusy character. One 750 ml bottle at 45% ABV, 90 proof, and it works well in an old-fashioned.
