For this reposado, San Matias crushes its cooked agave with a tahona stone, the old-fashioned way of extracting juice that leaves its own mark on the finished tequila. Time in barrel then rounds the spirit out, pairing long-standing production practices with consistent modern quality control.
The result pours at 40% ABV in a 750 ml bottle, with cooked agave and vanilla up front, oak through the middle, and a touch of pepper against caramel sweetness. Aging brings the parts together into a smooth, balanced whole.
