Description
Made from 100% Agave Salmiana and double-distilled in San Pablo Huixtepec, Oaxaca, this 12-year expression leans further into herbaceous territory than the rest of the range. The aroma opens with fresh green chili and grapefruit peel, alongside the scent of agave just after a rainfall. Bottled at 42% ABV in a 750 ml format.
Citrus carries through on the palate, joined by a sweet thread of dried herbs before the finish turns spicy with even, earthy minerality. Sweet and spicy in equal measure, it drinks well neat, or with olives and demerara, or semi-pickled celery with worm salt to draw out its finer details.
