Tequila Cabal Reposado Limited Edition starts with the brand’s Blanco. It then rests for eight months in American white oak barrels. The wood gives it a golden amber color and a gentle layer of oak over the agave. The name comes from the Spanish word caballero, which means gentleman.
Cabal is made at NOM 1480, Tequila Las Americas, in Amatitán, Jalisco. The agave hearts cook for 42 hours in a 32-ton brick oven built in 1911. Then they ferment naturally for three days. The spirit is distilled twice before it goes into oak.
On the nose, you get fresh herbs, agave and a soft white oak note. The palate is fruity and clean, with citrus, sweet cooked agave and a touch of vanilla. It finishes smooth, refreshing and lightly oaky.
Pour it neat or on the rocks to enjoy the agave. It also works well in a reposado margarita or other .
