Description
Siembra Valles Reposado comes from the lowland valleys of Jalisco, the area around the town of Tequila. It is made at the Cascahuin distillery, NOM 1123, from 100% blue Weber agave. Brick ovens cook the agave, and a roller mill pulls out the juice. Deep well water is used in production.
After fermenting in stainless steel tanks, the tequila is double distilled. The still is a stainless pot with a copper coil. It then rests for over six months in American oak, made from Missouri Ozark wood. Those barrels once held Siembra’s highland tequilas.
The producer’s notes start with cooked agave, fresh peppercorn, and walnut. Give it a few minutes and you’ll catch hay, mint, grapefruit, and cardamom. The sip has natural sweetness, with honey, almond, and vanilla from the barrel. Mint, minerals, and roasted agave keep it lively. The finish brings lingering pepper and a gentle, pleasant bitterness.
Sip it neat or slightly chilled to get the full picture. It also adds depth to a premium margarita or other agave cocktails. Try it with grilled seafood, roasted vegetables, or citrus salads. Aged manchego, roasted nuts, and dark chocolate are good matches too.
You’ll enjoy this bottle if you like agave first and oak second. It shows the earthy, peppery side of valley tequila in a calm, balanced way.
