Description
Siembra Valles Blanco comes from the lowland valleys of Jalisco, in the town of El Arenal. The Rosales family makes it at Destilería Cascahuín under NOM 1123. They have made tequila for over a century and opened this distillery in 1956. This is a great for anyone curious about valley-grown agave.
The blue agave grows on estate land in sandy, mineral-rich volcanic soil. Workers harvest it by hand and roast it in brick ovens. A small roller mill crushes the cooked hearts. The juice ferments in open-air tanks along with the agave fibers. It is then distilled twice in a steel pot still with a copper coil. Tequila Matchmaker lists it as additive-free.
Pour a glass and you get sweet cooked agave right away. Citrus peel, fresh honey and soft floral tones follow. The palate is rich and textured. Black and white pepper meet gentle baking spice and a squeeze of citrus. The finish is clean and dry, with a light herbal note and a touch of lime peel.
It is lovely neat or on the rocks. It also makes a bright Margarita or Paloma, or try it in your . Pair it with ceviche, fish tacos or grilled shrimp. Grilled steak or fresh cheeses work well too.
If you want a with real agave flavor and nothing added, this is an honest choice. It is a fun bottle to taste next to a highland blanco.
