Description
Built on a mash bill of 95% rye and 5% malted barley, Penelope Toasted Rye spends its full maturation in charred new American oak, then moves into a Char 2, Heavy Toast barrel for a second act. The annual release is bottled at 100 proof, a strength that carries the added barrel character without flattening the grain underneath.
The palate leads with toasted marshmallow and warm caramel, followed by vanilla, toffee and a touch of leather. Toasted oak, brown sugar and a slow ripple of spice close things out, showing what a finishing barrel can bring to a straight rye whiskey.
