Co-founder and master blender Danny Polise picked each barrel from different warehouses and floors after a decade of aging. So your bottle carries its own small quirks, even within the same release. Penelope is known for working with more than one grain recipe. This release comes from two mash bills. One uses 75% corn, 21% rye and 4% malted barley. The other raises the rye to 36% for a spicier pour. Your label tells you which one you have.

The 21% rye barrels open with vanilla, caramel, dried fruit and plum. Sip and you get caramel, butter toffee and wild cherry candy over light rye spice. The finish brings cinnamon and a frosting-like sweetness, then spice that lingers. The higher-rye barrels lean toward graham cracker, apricot and light chocolate instead.

The 2024 Estate Collection Single Barrel won a Gold medal at the 2025 San Francisco World Spirits Competition. It shows how much a single cask can say on its own.

Pour it neat, over a large cube, or into a careful Old Fashioned. Dark chocolate, smoked meats and roasted nuts all suit it. This is a good pick for collectors and for anyone who enjoys comparing barrels side by side.
