Six years in new handmade fine grain charred American oak shapes this 48.5% ABV rye from Old Potrero. The barrels are built by coopers following methods used in the early 19th century: oak staves are heated over open flames of oak chips and bent into shape, then the fire is left burning until the inside of the barrel catches and chars right through. Most distillers gave up this approach long ago, and the difference shows in the glass.
Those hand-charred casks give the whiskey a deep color and a flavor that leans into brown sugar, black cherry, baking spice and maple. It’s a rye with weight and layers, carrying the mark of barrels made one at a time rather than by machine, and offered in a 700 ml bottle for drinkers who care about how whiskey is actually made.
