Description
This comes from New Louisville Whiskey Co. The bourbon is distilled at MGP in Lawrenceburg, Indiana. Then it travels to Louisville, where the real work begins. There, the team at PCS Distilling finishes aging and bottles each barrel.
The barrels sit in a heat-cycled warehouse. Rising and falling temperatures push the spirit in and out of the wood. That raises the proof and builds a thick, rich texture. Most barrels see eight to ten years in new charred American oak.
Every bottle is a single barrel, so no two taste quite the same. Some barrels use a high-rye mash of 60% corn, 36% rye and 4% malted barley. Others carry more corn and lean sweeter. Each one is bottled at cask strength, often between about 124 and 140 proof. It is never chill-filtered.
Expect a bold pour. The nose shows burnt sugar, caramel and toffee with toasted spice and dark cherry. The palate is thick and powerful, with dark caramel, leather, baking spice and dark fruit. The finish runs long, with oak and caramel that stay with you.
Sip it slowly, and add a little water if the heat feels big. It stands up well to grilled meats, barbecue or a square of dark chocolate.
