Manuscrito Blanco High Proof Chapter Two arrives at 51.55% ABV in a 750 ml bottle, built for drinkers who want a blanco with weight behind it. Master Distiller Oscar Vazquez Camarena produces it at El Sabino Distillery in Jesus Maria, Mexico, using single-estate, 100% Blue Weber agave harvested between six and eight years of maturity. Fermentation with the agave fibers, along with measured oxygenation, pulls more of the plant into the glass and gives the spirit its unusual depth.
The nose opens on roasted agave, white pepper, bell pepper and citrus zest, with earthy undertones and a trace of baking spice. On the palate, cooked agave and vegetal richness lead, followed by black pepper, green bell pepper, warm baking spices and bright citrus. The finish runs long and peppery, with earthy tones and a clean agave core. Its intensity suits a classic Tommy’s Margarita, where the pepper carries through citrus and agave nectar, or a Paloma, where grapefruit soda lifts the vegetal side. Neat or over a large cube lets the heat unfold slowly.
