Description
Mal Bien Papalote Joven Gutiérrez is a producer-focused Mexican agave spirit from Guerrero. This expression is produced by the Gutiérrez family using 100% Papalote agave grown around Tepehuixco. The family represents multiple generations of agave-growing and distilling knowledge in the hills above Chilapa de Álvarez. Mature agave is cooked in a traditional earthen oven using regional woods. After cooking, the agave is chopped and milled before undergoing open-air fermentation in wooden vessels. Spring water is used during fermentation, which typically lasts between five and six days. The fermented agave is distilled twice in a small copper alembic still. The Gutiérrez family’s Papalote spirits are known for characteristic chocolate and chile notes. Bottled at 90.4 proof, or 45.2% alcohol by volume, this joven expression presents its agave character without barrel aging.
