Description

Lágrimas del Valle Reposado La Sabina is a single-ranch, vintage tequila. Every bottle comes from one field of 100% blue Weber agave. This time the field is La Sabina, in Romita, Guanajuato.

The ranch sits at about 1,760 meters, and its agave averaged 37 Brix. Those plants grew in dark, dry soil among sweet acacia trees. It is the first Lágrimas release made with agave from Guanajuato.

The tequila is made at Tequila Cascahuín in El Arenal, Jalisco, under master distiller Salvador “Chava” Rosales Trejo. The agave cooks slowly in masonry ovens. Most is crushed by roller mill, and some by stone tahona. It ferments in steel and open wooden tanks, then gets double distilled. Nothing is added.

It rests just three months in third- and fourth-fill ex-bourbon barrels. That light touch keeps the agave in front. You will find toasted marshmallow, violet and a little citrus on the nose. The palate tastes of pumpkin pie filling, rich custard and cream soda. Caramel and a pinch of cinnamon add warmth, and the finish stays sweet and round.

At 46% ABV, it has enough body to sip slowly at room temperature. A few drops of water will open it further. Try it beside grilled seafood, roasted vegetables or aged Manchego.
