Vinification: Grapes are hand-sorted cluster by cluster at the cellar; the less ripe ones are directly pressed, and the rest are macerated in the juice for 23 days, partially destemmed by hand with a portion of whole clusters (in sandstone jar); very gentle vertical pressing; aged in tank for 7 months.
