L’Indigène in magnum
Structured Gamay like this does really well in magnum: it ages more slowly and evenly, so it is a nice one to put away for a year or two, or to open for a crowd.
How is it made?
Gamay from around Blacé in southern Beaujolais, left on skins for about a month, pressed slowly and bottled with no added sulphur.
is Maï Lam, a French-Vietnamese winemaker who spent years in the Singapore food and drink scene before moving to Beaujolais. She makes her wines in the same cellar as her partner Sébastien Morin, always with no added sulphites.
