Description
Kilinga Bacanora Silvestre brings the Sonoran desert to your glass. Bacanora is an agave spirit made only in the Mexican state of Sonora. Kilinga is a small, family-owned producer in the town of Álamos. Maestro bacanorero Rodrigo Bojórquez Bours founded it in 2018 and named it for his mother.
Silvestre is distilled from wild Agave angustifolia Haw, harvested at seven to eight years old. Those young, green plants give it a light, springlike feel. It is made in small batches and double distilled. Every bottle is numbered and signed by Rodrigo. In the glass it is crystal clear, and there is almost no smoke.
On the nose, you’ll find subtle floral and herbal notes with a fresh hint of green agave. Take a sip and wildflowers and citrus come first. A tart note of green apple follows close behind. The finish is gentle, with a soft violet touch that fades fast.
Kilinga was the first officially certified Bacanora sold in the United States. The brand’s very first bottling, in fall 2019, also won an award at the San Francisco World Spirits Competition.
Sip it neat to enjoy its floral side. A single big cube of ice works too, and it shines in a bright Bacanora Paloma. Pair it with ceviche, grilled fish tacos, or fresh citrus fruit. If you like artisanal agave spirits with a lighter touch, this is one to try.
