Description
Kilinga Bacanora Blanco is an unaged agave from Álamos, in Sonora, Mexico. Bacanora is Sonora’s own agave spirit. Kilinga was the first officially designated bacanora sold in the U.S.
It is made from Agave angustifolia Haw grown on the family’s own farm. The plants mature for 10 to 12 years. Growers use the capón method, cutting the stalk early so the plant feeds the piña. The spirit is then distilled twice.
Rodrigo Bojórquez Bours founded the family-owned brand in 2018 and named it for his mother. He is also its master bacanorero. In 2022 the New York International Spirits Competition named Kilinga its Bacanora Distillery of the Year.
Expect an earthy nose of toasted agave and soil, with a touch of wildflowers. The palate brings roasted agave, toasted caramel and minerals, plus some black pepper. The finish is earthy, subtle and balanced.
Sip it neat or over ice to meet the agave up close. It also works in a Margarita or a Paloma. Pair it with tacos, ceviche, grilled fish or grilled meats.
