Description
Ten years of aging shape Kaiyo ‘The Ruby,’ a non-chill filtered Japanese malt whisky bottled at 46% ABV. Three of those years take place in Mizunara oak, three months are spent maturing at sea, and the remaining seven years happen in former Ruby port pipes, each stage adding another layer to the spirit.
The pour is warm and complex, with oak and spice running alongside dried fruit and a gentle sweetness carried over from the port wood. It finishes smooth and long, offered in a 750 ml bottle.
