Winemaker’s Notes
JUSTIN’s 2023 Cabernet Sauvignon reflects Paso Robles through ripe black fruit and a savory, spice-driven frame. Blackberry, boysenberry, black plum, and cassis meet sage, dried herbs, roasted pepper, and leather, with fresh acidity and measured tannins supporting the broad palate.
The grapes were picked by hand and berry sorted, then the finished wine matured for 15 months in small American oak barrels, 25% of them new. Chocolate, cinnamon, clove, vanilla, and barrel spice deepen the fruit character before a lingering blackcurrant and dark chocolate cherry finish.
