Description
Rather than pulling from a single barrel run, Hillrock builds this bourbon in a solera: younger whiskey is continually blended into casks holding older stock, so the profile keeps shifting and deepening over time. The result is layered rather than linear, with oak, caramel and vanilla running through the center.
A finishing period in Pedro Ximenez sherry casks brings Spanish fortified wine influence to the blend, adding dark fruit, gentle sweetness and spice around the edges. Bottled at 57.35% ABV in a 750 ml format, it carries that strength with a rich, complex body shaped by the solera method.
