High West Cask Collection Oloroso Sherry is a limited release from High West in Park City, Utah. It is a blended straight whiskey. The whiskey first ages the traditional way as straight whiskey. Then it moves into Oloroso sherry casks for a finishing rest. It is bottled at 100 proof, or 50% ABV, and is non-chill filtered.
Oloroso is a rich, nutty style of sherry. Its casks pass on dark fruit and nut flavors that plain oak can’t give. That is the whole idea behind this bottle.
The nose brings dried figs, toasted walnuts and caramel. Hints of dark chocolate, raisins and oak sit underneath. On the palate, sherry sweetness meets dried fruit, nuts and toffee. Baking spice and charred oak give it backbone. The finish is long and elegant. Sherry, dried fruit, nuts and gentle spice hang on well after you swallow.
