High West 7000′ is an oat vodka from High West Distillery in Park City, Utah. The name points to the distillery’s home, about 7,000 feet up in the Rocky Mountains. High West lists it as an oat flavored vodka at 40% ABV.
The mash is 85% oats and 15% malted barley, blended with a wheat and corn base vodka. High West skips chill filtering and carbon treatment, so the soft oat character stays in. It is cut with local snowmelt that filters naturally through deep rock.
You’ll find a creamy nose of vanilla, grain and citrus. The palate brings orange peel and grapefruit. It ends gently, with toasted oats and a little sweet toffee.
