Fuenteseca Cosecha Tequila Blanco 2020 is a vintage tequila from master distiller Enrique Fonseca. Cosecha means harvest, and each release captures one year of agave. This one comes from 100% blue Weber agave grown in a single field, La Tuna de Arriba. The field sits above 6,700 feet in San Ignacio Cerro Gordo, in the highlands of Jalisco.

Red, iron-rich volcanic soil and a cool climate give a softer, sweeter and more floral blanco.

The tequila is made at the Tequileña distillery, NOM 1146. The agave cooks for 24 hours in a low-pressure autoclave. Next come a roller mill and a screw mill. Fermentation takes place in stainless steel with deep well water and a house yeast. After double distillation in copper pot stills, it rests in steel tanks. Nothing is added.

On the nose, you’ll find cooked agave, citrus zest and soft floral notes. The palate is thick and rich, with sweet cooked agave and lemon and orange zest. A light mineral edge keeps it fresh. The finish is long and clean, with agave sweetness and a soft mineral echo.

Sip it neat at room temperature and give it a few minutes in the glass. Try it beside other Cosecha years to see how each harvest differs. Pair it with fresh ceviche, grilled seafood, citrus salads or aged goat cheese.
