The Foursquare Rum Distillery, helmed by master distiller Richard Seale, operates on the island of Barbados and draws on centuries of Caribbean rum-making tradition. Penultimus — the second-to-last in the Exceptional Cask Series — combines pot still and column still rums aged in American oak ex-bourbon and ex-cognac casks. The result is a single blended rum of notable depth and structural complexity, with the balance that comes from 15 years of tropical maturation in the island’s warm climate.
Best appreciated neat or with a single large ice cube to allow the layers to open up slowly. It also performs beautifully in spirit-forward cocktails where its age and oak character can anchor the drink without being overwhelmed.
