Tasting Profile

  • Aroma: Inviting and fresh, featuring notes of green apple, baked pear, and caramelized agave, with subtle hints of charcoal or kirsch.
  • Palate: Slightly sweet and robust, showcasing ripe agave, candied nuts, and a strong sense of earthy undertones like wet earth.
  • Texture & Finish: Medium-bodied and balanced with a warm, slightly prickly texture. The finish is described as soft, spicy, and lingering.

Production Details

The unique flavor profile of Fidencio Único is achieved through innovative production methods led by fourth-generation mezcalero Enrique Jiménez:

  • Agave: 100% Estate-grown Espadín (Agave angustifolia), harvested during the full moon for a more delicate character.
  • “Sin Humo” Cooking: Unlike traditional mezcals roasted in wood-fired pits, the agave for Único is cooked using dry, radiant heat in a custom-built oven. This eliminates the influence of smoke.
  • Crushing & Fermentation: The agave is crushed using a traditional Tahona (stone wheel) and fermented with native wild yeasts in pine vats.
  • Distillation: Double-distilled in a custom-designed, wood-fired copper Alembic still.

This mezcal is versatile, making it an excellent choice for sipping neat or as a clean base for “agave eau-de-vie” style cocktails.
