Description
Fidencio Madrecuixe Joven Mezcal is an artisanal, small-batch spirit crafted from the rare, wild Madrecuixe agave (Agave karwinskii) in Santiago Matatlán, Oaxaca. It is highly regarded for its complex, terroir-driven profile that leans heavily into earthy, vegetal, and mineral characteristics rather than just smoke.
Flavor Profile & Tasting Notes
- Aroma: Opens with a vegetal and floral bouquet. Key scents include roasted agave, fresh earth, and light citrus. Some reviewers also note brighter hints of lime, eucalyptus, and fresh rain.
- Palate: A medium-to-full-bodied experience that starts with mineral-rich soil and red clay, transitioning into mountain herbs like oregano, thyme, and pine. It features a balanced smokiness that doesn’t overpower.
- Finish: A long, clean, and dry finish. Subtle lingering notes of leather, stone, and a touch of toffee or caramelized sugar sweetness round out the sip.
- Texture: Described as unctuous and velvety, providing a fresh yet bold mouthfeel.
Production & Craftsmanship
This mezcal is overseen by Maestro Mezcalero Enrique Jiménez, a fourth-generation producer who uses traditional Oaxacan methods:
- Agave: Responsibly sourced wild Madrecuixe agave, typically harvested after 12 to 18 years of growth to ensure maximum sugar concentration.
- Cooking: Agave hearts (piñas) are slow-roasted for five days in an underground earthen pit lined with volcanic rocks and heated by black oak.
- Milling & Fermentation: The roasted agave is crushed using a traditional stone Tahona and fermented naturally with wild yeasts in open-top pine vats.
- Distillation: Double-distilled in copper alembic stills
Fidencio Madrecuixe Joven is best enjoyed sipped neat at room temperature to fully appreciate its layered herbal and mineral complexity
