Ferrari-Carano Cabernet Sauvignon is a Sonoma County red made mostly from the winery’s own vineyards in Alexander Valley. The winemakers blend in a good share of Syrah. That adds dark fruit, color and a plush middle to the Cabernet backbone.
The wine is aged in French oak, which gives it a gentle toasty spice without covering the fruit. You get a bold, full-bodied red that still feels polished.
Swirl your glass and you will smell dried cherry and blackberry with a pretty touch of violet. Hints of maple, sage and something a little savory, like pancetta, follow. On the palate it is round and generous, with plum jam, cola and coffee. A hint of leather and smooth tannins lead you into a long, rich finish.
Ferrari-Carano suggests roasted, broiled or barbecued meats with this . Think lamb chops, grilled steak, pork or veal. Strong cheeses such as sharp cheddar or blue cheese are a nice match, too.
