Description
Just 100 liters of this 2023 release came from Jabalí agave, a varietal whose natural saponins foam up through every stage of production and make it notoriously hard to work with. Each liter took fifty-five pounds of raw agave, meaning far more labor and far less mezcal in the bottle than other varieties require. At 49% ABV in a 375 ml format, it drinks smoky and earthy, with roasted agave, citrus zest, and a trace of minerality and pepper closing things out.
Master mezcalero Silverio Garc\u00eda Luis distilled this batch, bringing back a Garc\u00eda family practice that had gone unused for close to fifty years. During Oaxaca’s prohibition era, his father, Don Lencho, worked around military seizures of distilling equipment by replacing the copper turbante with a hollowed quiote, the agave’s flowering stalk. This limited expression reflects both that ancestral method and the patience the plant itself demands.
