Production details of Chénas Les Carrières: Chénas Les Carrières is made by Paul-Henri Thillardon in the Beaujolais cru of Chénas. The Gamay grows on flint soil on an old alluvial quarry facing south. Harvest is by hand in 20kg boxes that are cooled to 7-10°C before vinification. The wine is destemmed and macerates 15 to 28 days, then is vertically pressed and ages in concrete vats. The domaine extends across 14 hectares over three crus, farmed with a lunar-calendar approach. Sulphur is kept around 10 mg/L.
Tasting Notes: We have not yet tried this vintage of Chénas Les Carrières by Domaine Thillardon, but we hear it has notes of sweet berry fruit, potpourri, peony, light spice and crushed rock minerality.
