Copalli White Rum comes from a single estate in Southern Belize, where Copal Tree Distillery works with just three inputs: fresh-pressed sugarcane juice, yeast, and canopy water sourced from the surrounding rainforest. Bottled at 42% ABV in a 750 ml format, this organic rum is made with sustainability built into the process, and it carries the clean character of the place it comes from.
Pot and column distillation are combined, and the spirit rests in stainless steel rather than wood, which keeps the raw ingredients front and center. The nose offers sweet molasses and vanilla with touches of tropical fruit and spice, leading to a smooth, rounded flavor that works equally well on its own or in cocktails.
