Description
This is the first wheated recipe from Chicken Cock, a brand founded in 1856. The mash bill is 68% corn, 20% wheat and 12% malted barley. Wheat takes the place of rye, so it tastes softer and sweeter.
It ages at least five years in #4 char new oak and is bottled at 94 proof.
The nose is gentle, with brown sugar and baked bread. The palate is velvety, with cordial cherries, cream soda and caramel. The finish brings baked dough, dried fruit and soft spice.
Pour it neat, over a large cube or in an Old Fashioned. Try it with BBQ pork or pecan pie.
