Island Rooster begins as a Kentucky straight rye and finishes its maturation in rum barrels, a pairing that carries the grain’s natural spice into sweeter territory. Bottled at 47.5% ABV in a 750 ml format, it keeps the structure of a rye while picking up character from the second cask.
The result leans on molasses and caramel, with vanilla filling out the middle and rye spice running through from start to finish. The close is nuanced rather than sharp, reflecting both sides of the barrel program.
