Chicken Cock Red Stave brings together two American traditions: Kentucky bourbon and California wine. This Kentucky straight bourbon is finished in J. Wilkes Petite Sirah barrels from the Paso Robles Highlands. The brand began in 1856 in Paris, Kentucky.
You’ll smell dark chocolate, toasted oak and dried fruit. The sip opens with chocolate, caramel and vanilla, then pear, apple, cherry and red currant.
Tart cranberry and black pepper lead into a long finish of nutmeg and clove. It is bottled at 102.4 proof.
Sip it neat or add a few drops of water. A grilled steak, a berry dessert or dark chocolate makes a fine match.
