Production details of Pouilly-Fuissé Les Birbettes: Les Birbettes is a Pouilly-Fuissé Chardonnay from Château des Rontets in Burgundy. The name comes from French slang (“birbe”, “birbon”, “birbette”) for something old, in this case the centenarian vines planted between 1910 and 1945. The one-hectare parcel sits next to the house with a higher density of 10,000 vines per hectare. The wine ferments with wild yeasts and ages 22 months in older oak casks (228L and 400L). The vines have been farmed without synthetic chemistry since 2005.
Tasting Notes: We have not yet tried this vintage of Les Birbettes by Château Des Rontets, but we hear it has notes of citrus, white flower, white pepper and a deep saline mineral finish.
