Description
Centinela Clásico Reposado comes from Tequila Centinela in Arandas, in the Highlands of Jalisco. The family-owned company was founded in 1904 and still runs its own distillery under NOM 1140. Centinela means sentinel, and the brand calls itself a guardian of true tequila.
Production follows the old ways. Centinela grows its own blue Weber agave and slow-roasts it in masonry ovens. A roller mill pulls out the juice. Fermentation happens in steel tanks with the agave fibers left in, and then the tequila is double distilled. The tequila rests for four to six months in American white oak barrels. No additives go in.
The nose brings cooked agave, caramel and toasty oak. On the palate you taste cooked agave, vanilla and caramel, with warm spice and a little black pepper. The finish is medium in length, with pepper, agave and a last touch of vanilla.
