Released at three years old — the youngest age at which the spirit could legally be called whisky — Just Hatched announced the arrival of one of the Southern Hemisphere’s most closely watched new single malt makers, bottled in a 375 ml format befitting its limited run.
Bottled at full cask strength, the liquid leads with fresh orchard fruit and honeyed malt, building through ripe stone fruit, toffee, and vanilla before a peppery flick of baking spice. There is youthful energy here, but the spirit carries it with surprising poise, finishing long and warming with cereal sweetness and a light touch of oak.
