Bottled unaged at 49.1% ABV, Burrito Fiestero Mezcal Ancestral Joven Castilla comes from Oaxaca and is made in the Castilla region using ancestral methods. The 750 ml joven bottling puts the agave itself front and center, with no barrel time between distillation and glass.
Smoke runs through the palate alongside the earthy weight of cooked agave, while citrus brightness and a mineral streak round things out. It’s a straightforward look at traditional mezcal character as the ancestral process produces it.
