Description
Absente 110 Proof is a traditional French absinthe made with wormwood. Distilleries et Domaines de Provence produces it in the south of France. The recipe pairs wormwood with eight other herbs, including anise, star anise, lemon balm and peppermint. Since 2009, the US bottling has used grande wormwood, the classic absinthe herb.
The method is old school. The herbs are steeped first, and the infusion is then distilled in the traditional absinthe style. It is bottled at 110 proof, or 55% ABV. In the glass it shows a bright greenish-yellow color.
The aroma reaches you before your first taste. You get soft licorice, fresh herbs, light floral notes and a hint of citrus. On the palate, lively anise leads. It feels silky and rich, and only slightly sweet. Herbal bitterness builds into a long, warm finish with a little spice.
Take your time with it. The classic way is to add cold water slowly, over a sugar cube if you like. Watch it turn cloudy as the herbs open up. You can also rinse a glass with it for a Sazerac, or pour it over ice to tame the heat.
This bottle suits you if you love intense, and like to sip slowly. If you prefer light drinks, start with a small pour and plenty of water.
